Create a fiesta at home with these tasty bean enchiladas!
Ingredients:
  • Olive oil, to grease
  • 150g vegetarian cheese (Mainland brand), coarsely grated
  • 20.00 ml plain flour
  • 125ml (1/2 cup) no-fat milk (Dairy Farmers Shape brand)
  • 8 enchilada tortillas (Old El Paso brand)
  • 1 x 420g can mexican chilli beans (MasterFoods brand)
  • 1 cos lettuce, leaves separated, washed, dried
  • 40.00 ml fresh coriander leaves, to garnish
Instructions:
  • 1. Preheat the oven to 200°C. Brush a 22cm round baking dish with oil. Set aside 25g (1/4 cup) cheese. In a saucepan, mix the rest of the cheese with flour. Slowly pour in the milk, then cook over medium heat, stirring continuously for about 3 minutes until the sauce thickens slightly.
  • Let's make it more fun: Lay out tortillas and fill with beans. Roll them up like little burritos. Place them in the dish, pour over sauce, sprinkle with cheese. Bake on the top shelf for 10 minutes until crispy and golden. Enjoy!
  • Arrange crisp and fresh lettuce leaves on individual serving plates. Add the delicious enchiladas on top and generously sprinkle with fresh coriander for a flavorful finishing touch.
