Whip up these zesty vegetarian bean enchiladas for a satisfying meal, perfect for busy nights. Customize with chicken and fresh cilantro if desired.
Ingredients:
  • cooking spray
  • 2 (16 ounce) cans refried beans
  • 2 cups shredded Mexican cheese blend, divided
  • 0.5 cup chopped onion
  • 12 (6 inch) corn tortillas
  • 2 (10 ounce) cans red enchilada sauce
Instructions:
  • Assemble all the delicious components.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously spray a 9x13-inch casserole dish with cooking spray.
  • Combine refried beans, 1 1/2 cups cheese, and onion in a microwave-safe bowl. Heat in the microwave until cheese is melted, approximately 1 minute on high power.
  • Place a stack of three tortillas on a microwave-safe plate and heat in the microwave on high for about 30 seconds until warm. Repeat with the remaining tortillas.
  • Cover a small plate generously with enchilada sauce and swiftly coat both sides of a tortilla in the sauce.
  • Spread the bean filling down the center and fold the tortilla around it.
  • Transfer the filled tortillas into the baking dish, and continue the process with the remaining tortillas until all are filled and rolled.
  • Cover the filled tortillas with the remaining enchilada sauce and sprinkle with the rest of the cheese, then cover the dish with aluminum foil.
  • Bake in the preheated oven until the sauce bubbles and the cheese melts, about 35-40 minutes.
