Easy homemade pupusas: Thick, cheesy griddle cakes filled with beans, a versatile and delicious dish from El Salvador.
Ingredients:
  • For the dough
  • 2 cups (228g) masa harina, white or yellow
  • 1 teaspoon chicken bouillon granules, optional
  • 1 1/2 to 2 cups boiling water
  • 2 tablespoons (28g) butter or lard, softened
  • Vegetable oil, for cooking
  • For the filling
  • 1 cup shredded mozzarella cheese or Oaxaca cheese
  • 1 cup refried beans, optional
Instructions:
  • Prepare the dough: Combine masa harina, chicken bouillon (if desired), and salt in a large mixing bowl. Gradually pour in hot water while stirring with a rubber spatula to prevent clumps. Allow the dough to rest briefly to absorb the liquid, adding more water if necessary. The dough should resemble play dough - slightly sticky. Incorporate the butter while the dough is warm for easy mixing. Ensure the butter is evenly distributed using your hands or a spatula.
  • After the dough has cooled, coat your hands with a blend of oil and cold water to prevent sticking. Divide the dough into two equal portions, then split each into 6 pieces to make 12 pupusa portions. Shape them into golf ball-sized balls, keeping them covered with a moist cloth to retain moisture while forming pupusas.
  • Shape the pupusas: Take a ball, flatten it into a 3-inch disk, and make an indentation in the center. Place a tablespoon of beans (if using) and a heaping tablespoon of cheese in the center. Fold the edges towards the center to enclose the filling, flatten gently back into a 3-inch disk. If dough cracks, moisten hands and smooth edges.
  • Prepare the pupusas: Heat a griddle, large non-stick skillet, or cast-iron pan over medium heat and lightly oil. Cook 2 to 3 pupusas on the hot surface until edges turn golden and the spatula glides underneath easily, about 3 minutes per side. Serve warm and enjoy!
