Zesty El Salvadoran cabbage salad - perfect for pairing with pupusas!
Ingredients:
  • 0.5 head green cabbage, cored and shredded
  • 1 carrot, grated
  • 1 quart boiling water
  • 3 green onions, minced
  • 1 cup distilled white vinegar
  • 2 teaspoons dried oregano
Instructions:
  • In a large bowl, soak the cabbage and carrot in boiling water for 5 minutes. Drain well. Return the vegetables to the bowl and add green onion, vinegar, 1/2 cup water, and oregano. Mix until fully combined. Chill for 20 minutes before serving.
