Spicy pickled slaw from El Salvador with cabbage, carrot, and onion - a simple, flavorful dish for any meal.
Ingredients:
  • 1 head cabbage, finely shredded
  • 1 white onion, halved and sliced 1/4-inch thick
  • 1 large carrot, grated
  • 4 red bird's eye chile peppers, grated
  • 1.5 tablespoons salt, or to taste
  • 3 cups boiling water
  • 0.5 cup vinegar
  • 1 tablespoon oregano
Instructions:
  • Combine cabbage, onion, carrot, and chile peppers in a large bowl. Evenly sprinkle salt over the mixture. Pour boiling water over the ingredients. Allow to cool to room temperature for about 1 hour.
  • Drizzle vinegar over cabbage; sprinkle with oregano and gently combine.
  • Chill in the refrigerator for at least 8 hours or overnight to let the flavors meld.
