Make a festive fiesta bake with seasoned beef, onions, tomato soup, taco mix, diced tomatoes, and macaroni. Top with corn chips, Cheddar, and Monterey Jack before baking.
Ingredients:
  • 8 ounces macaroni
  • 0.5 cup chopped onion
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (1.25 ounce) package taco seasoning mix
  • 2 ounces shredded Cheddar cheese
  • 2 ounces shredded Monterey Jack cheese
  • 1 cup crushed tortilla chips
  • 0.5 cup sour cream
  • 0.25 cup chopped green onions
Instructions:
  • Preheat your oven to a toasty 350°F (175°C).
  • Boil pasta until perfectly cooked. Then, drain.
  • Brown ground beef and onion in a large skillet over medium heat. Add tomato soup, diced tomatoes, and taco seasoning mix. Mix in pasta.
  • Spread the beef mixture evenly into a 9x13 inch baking dish. Top with crunchy taco chips and a generous layer of grated cheese.
  • Bake for 30 to 35 minutes until the cheese is gooey and bubbly. Top with fresh green onions and a dollop of tangy sour cream before serving, if preferred.
