Quick and delicious taco casserole with flavorful ground beef, black beans, salsa, tortilla chips, and gooey cheese - perfect for a family-friendly meal in just 20 minutes!
Ingredients:
  • 1 pound lean ground beef or ground chuck
  • 1 (1-ounce) envelope taco seasoning mix
  • 1 medium red onion, finely chopped, divided
  • 2 cups mild chunky salsa
  • 1 (15-ounce) can black beans, drained and rinsed
  • 4 cups sturdy tortilla chips (about 3 1/2 oz.)
  • 4 ounces pre-shredded Mexican 3-cheese blend (about 1 cup)
  • 1/2 cup shredded iceberg lettuce
  • 1/2 cup chopped tomatoes
  • 1/3 cup sour cream
Instructions:
  • Get ready to broil delicious dishes by preheating your oven to the highest setting with a rack positioned 8 inches away from the heat source.
  • Sear the beef: In a large ovenproof skillet over medium-high heat, cook the beef with taco seasoning and about 1 cup of onion. Stir frequently until the beef is browned and onion is translucent, 6 to 7 minutes. Keep the juices in.
  • Stir in the salsa and beans, then reduce the heat to medium. Cook and stir occasionally until the sauce thickens and the flavors blend, approximately 3 minutes.
  • Gently mix in the tortilla chips. Sprinkle with cheese and place under the broiler. Cook until cheese is melted, about 2 to 3 minutes. Garnish with lettuce, tomatoes, sour cream, and the rest of the diced onion. If you enjoyed the dish, please rate and comment below!
