Taco Mac and Cheese Casserole: Ground beef, salsa, corn, and Colby-Jack cheese combined for a flavorful twist on a classic dish.
Ingredients:
  • 1 (16 ounce) package ground beef
  • 2 cups salsa
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (1 ounce) package taco seasoning
  • 2 cups shell pasta
  • 2 cups shredded Colby-Monterey Jack cheese
  • 0.5 cup sliced green onions
  • 1 cup shredded sharp Cheddar cheese
Instructions:
  • In a large skillet over medium-high heat, brown the ground beef until crumbly, about 5 to 7 minutes. Discard grease, then stir in salsa, corn, and taco seasoning. Season with salt and pepper to taste.
  • Preheat your oven to 375°F (190°C).
  • Fill a large pot with lightly salted water and bring to a rolling boil. Add pasta and cook until al dente, about 10 to 12 minutes. Drain well.
  • In a 9x13-inch casserole dish, mix together the meat sauce, pasta, Colby-Jack cheese, and green onions, then sprinkle Cheddar cheese on top.
  • Cook until the cheese is gooey and bubbly in the preheated oven, approximately 25 minutes.
