Satisfy picky eaters with a quick and easy taco casserole featuring layers of seasoned ground beef, crushed taco shells, and melted Cheddar cheese.
Ingredients:
  • cooking spray (such as Pam®)
  • 1.5 pounds ground beef
  • 1 cup chopped onion
  • 1 (1 ounce) package taco seasoning mix
  • 1 (10 ounce) can refried beans
  • 1 (6 ounce) can sliced black olives
  • 1 (4 ounce) can diced green chiles
  • 0.5 cup salsa
  • 15 taco shells, broken up, or more to taste
  • 2 cups shredded Cheddar cheese
Instructions:
  • Preheat the oven to 375°F (190°C) while you generously spray a 9x13-inch baking pan with cooking spray.
  • Brown the ground beef and onions in a skillet over medium heat for 7 to 10 minutes, then drain any excess grease.
  • Combine water and taco seasoning in the pan, stirring occasionally until thickened for about 2 minutes. Then, lower the heat and mix in refried beans, olives, green chiles, and salsa. Keep stirring until everything is heated through, approximately 3 to 4 minutes.
  • Layer half of the broken taco shells into the bottom of the baking dish, then spread half of the ground beef mixture on top.
  • Spread a generous portion of the Cheddar cheese on top, then layer the ingredients once more.
  • Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  • Serve and savor while piping hot!
