Indulge in a delightful taco casserole filled with seasoned ground beef, tomatoes, sour cream, crunchy corn tortilla chips, and gooey Colby and Monterey Jack cheeses. Bake to perfection for a cheesy, bubbly delight the whole family will love.
Ingredients:
  • 1.5 pounds lean ground beef
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers, drained
  • 1 cup sour cream
  • 1 (1.25 ounce) package taco seasoning mix
  • 8 ounces shredded Colby-Monterey Jack cheese
  • 1 (18 ounce) package corn tortilla chips
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C).
  • Brown the ground beef in a skillet over medium heat, then drain excess fat. Stir in diced tomatoes with green chile peppers, water, sour cream, and taco seasoning mix. Simmer for 5 to 10 minutes.
  • Start by creating a base with a layer of tortilla chips in a 9x13 inch baking dish, followed by the meat mixture and cheese, then repeat the layers until the top layer is cheese.
  • Bake until the cheese is bubbly, approximately 20 minutes in the preheated oven.
