Taco-inspired bake with spicy biscuit topping, layers ground beef, corn, and black beans for a flavorful weeknight meal.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 pound ground beef
  • 1 (12 ounce) can corn, drained
  • 1 (14 ounce) can black beans
  • 1 cup biscuit baking mix (such as Bisquick®)
  • 0.5 cup milk
  • 0.5 cup shredded sharp Cheddar cheese
  • 1 egg
  • 2 tablespoons diced jalapeno peppers
  • 0.5 cup salsa
  • 0.5 cup sour cream
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a large skillet over medium heat, sauté onions in olive oil until softened, approximately 5 minutes. Then, add beef and cook until no longer pink, about 5 to 7 minutes.
  • Transfer the savory onion and beef mixture into a non-greased 8-inch baking dish, then top it off with layers of sweet corn and hearty black beans.
  • Combine biscuit baking mix, milk, Cheddar cheese, egg, and jalapeno peppers in a bowl, mixing until smooth. Spread mixture evenly over black beans in the baking dish.
  • Bake until beautifully golden for 30 to 35 minutes in the preheated oven.
  • Top with a delicious combination of salsa and sour cream before serving.
