Black bean soup featuring a harmonious blend of pureed beans with tomatoes and simmered beans with carrots, onion, and corn kernels.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 carrots, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 4 cups vegetable stock
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 (8.75 ounce) can whole kernel corn
  • 0.25 teaspoon ground black pepper
  • 1 (14.5 ounce) can stewed tomatoes
Instructions:
  • In a large saucepan, warm oil over medium heat. Sauté onion, garlic, and carrots, stirring occasionally, until onion is softened, about 5 minutes. Stir in chili powder and cumin, cook for 1 minute. Add stock, 1 can of beans, corn, and pepper, and bring to a boil.
  • Puree together the tomatoes and the remaining can of beans in a food processor or blender, then add the mixture to the pot. Cover and simmer over low heat for 10-15 minutes, or until the carrots are tender.
