Jerk pork chops with mango and black bean salad recipe

Savor a flavorful meal of spicy jerk pork chops paired with zesty mango and black bean salad for dinner tonight.
Ingredients:
  • 1 tsp ground allspice
  • 1 tsp dried thyme
  • 4.00 gm brown sugar
  • 1 tsp cayenne pepper
  • 4 Pork Loin Chops
  • 1 large mango, stoned, peeled, coarsely chopped
  • 400g can black beans, rinsed, drained
  • 1 small red onion, finely chopped
  • 62.50 ml coriander leaves, coarsely chopped
  • 2 limes
  • 2 baby cos lettuce, leaves separated
Instructions:
  • Preheat a barbecue grill or chargrill over medium-high heat. Mix allspice, thyme, sugar, and cayenne pepper in a bowl. Stir in oil until combined. Coat pork evenly with the spice mixture. Grill each side for 3 minutes or until cooked through. Rest on a plate for 5 minutes before serving.
  • In a bowl, mix together mango, beans, onion, and coriander. Squeeze the juice of 1 lime over the mixture and toss to combine well.
  • Cut the lime into wedges and divide the lettuce among serving plates. Top the lettuce with the mango mixture, season it, and serve with the pork and additional lime wedges.
