Crispy pork tacos

Irresistible crispy pork tacos with mashed black beans, salad, and spicy chillies. Perfect for messy, yet satisfying family meals.
Ingredients:
  • 1 green pepper
  • 1 large red onion
  • 1 fresh green chilli
  • 1 pinch of ground cloves
  • 2 tablespoons red wine vinegar
  • leftover pork dripping optional
  • olive oil
  • 2 tablespoons Cajun seasoning
  • 2 x 400 g tins of black beans
  • 300 g leftover cooked pork
  • leftover pork crackling optional
  • 1 level teaspoon sweet smoked paprika
  • 12 taco shells
  • ½ an iceberg lettuce
  • 6 tablespoons fat-free natural yoghurt
Instructions:
  • Remove the seeds from the pepper and peel the onion. Finely slice the pepper and half the onion, using a food processor, mandolin (using the guard), or good knife skills. Very finely slice the chili by hand. Transfer the sliced vegetables to a bowl, add cloves, vinegar, and a pinch of salt. Gently mix to create a pickle, then set aside. Finely chop the remaining onion half and cook in a pan over medium-low heat with pork dripping, oil, or Cajun seasoning for 8 to 10 minutes until golden. Add beans and bring to a boil, lightly mashing. Season and simmer. Dice pork and crackling, if using, and fry with oil and paprika until crispy. Warm tacos, shred lettuce. Load tacos with lettuce, black beans, crispy pork, and crackling. Drain excess liquid from pickle, add to tacos, top with yogurt, and enjoy.
