Versatile crispy cheesy waffles can be enjoyed as a tasty side, in a breakfast taco, or as a bun substitute for a pork and slaw sandwich.
Ingredients:
  • 6 medium russet potatoes
  • 4 tablespoons salted butter, softened
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C), then lightly prick the potatoes all over with a fork and place them on a baking sheet.
  • Bake in the hot oven until potatoes are fork-tender, for about 50 minutes to 1 hour. Remove and allow to cool before handling.
  • Preheat nonstick waffle iron to medium heat per the manufacturer's guidelines.
  • Combine butter, milk, salt, onion powder, garlic powder, and pepper with potato flesh in a bowl, mash until creamy. Fold in Cheddar cheese until evenly mixed. Remove and discard potato skins or save for later use.
  • Spoon potato mixture onto the preheated waffle iron, leaving some space around the edges. Close the iron and let the batter spread out. Cook until golden and crispy, around 5 minutes. Repeat with the rest of the batter.
