Cheesy potato skins with crispy toppings and creamy avocado - irresistible finger food!
Ingredients:
  • 4 medium potatoes, scrubbed
  • 55g (1 cup) finely grated cheddar
  • 1 avocado, mashed
  • 100g cherry tomatoes, chopped
  • 2 green shallots, trimmed, sliced
  • 21.00 gm fresh lime juice
  • Micro herbs, to serve, optional
Instructions:
  • Preheat the oven to 200C/180C fan forced. Arrange the potatoes on a baking tray and prick them all over with a knife. Bake for 1 1⁄2 hours or until they are tender. Once cool to handle, cut the potatoes in half lengthways and scoop out the flesh, leaving a 1cm shell. Cut the halves in half again and place them back on the tray. Spray with oil and bake for 20 minutes or until crisp.
  • Top the potatoes with a generous amount of cheese and bake until cheese is melted. Mix together the avocado, tomato, shallots, and lime juice. Fill the potato skins with the mixture and garnish with micro herbs, if desired.
