Irresistible loaded potato skins with Cheddar, bacon, sour cream, and scallions. Easy and delicious!
Ingredients:
  • 4 large baking potatoes, scrubbed
  • 3 tablespoons olive oil
  • 1 tablespoon grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon ground paprika
  • 0.125 teaspoon ground black pepper
  • 1.5 cups shredded sharp Cheddar cheese
  • 8 slices cooked bacon, crumbled
  • 0.5 cup sour cream
  • 4 stalks green onion, sliced
Instructions:
  • Preheat the oven to 450°F (230°C). Use a fork to prick the potatoes all over, then place them on a baking sheet.
  • Cook in the oven until potatoes are tender when pierced with a fork, approximately 50-60 minutes. Take out of the oven.
  • Once the potatoes have cooled slightly, slice them lengthwise and carefully scoop out the flesh, leaving a 1/4-inch border of skin. Set aside the potato flesh for later use, and return the empty skins to the baking sheet.
  • Mix together the olive oil, Parmesan cheese, salt, garlic powder, paprika, and pepper in a small bowl until well combined. Brush the mixture over both sides of the skins.
  • Crisp up in the oven for about 10 minutes, making sure to flip the skins halfway through.
  • Top the skins generously with aromatic Cheddar cheese and crispy bacon crumbs, then return to the oven until the cheese is perfectly melted, approximately 2 minutes.
  • Garnish with sour cream and chopped green onions before serving.
