Baked Potato Soup with Crispy Potato Skins

Creamy potato soup loaded with cheese, bacon, and sour cream, reminiscent of a steakhouse baked potato. Made hearty with Progresso™ chicken broth.
Ingredients:
  • 2 1/2 lb russet potatoes (about 5 medium)
  • 3 tablespoons butter, melted
  • 1/4 teaspoon salt
  • 6 slices bacon, cut into 1/2-inch pieces
  • 1 medium onion, chopped (1/2 cup)
  • 4 tablespoons all-purpose flour
  • 1/4 teaspoon black pepper
  • 1 carton (32 oz) Progresso™ Chicken Broth (4 cups)
  • 1 cup heavy whipping cream
  • 2 cups shredded medium Cheddar cheese (8 oz)
  • 6 tablespoons sour cream
  • 6 tablespoons thinly sliced green onions
Instructions:
  • Preheat the oven to 400°F. Give the potatoes a good scrub and poke each of them a few times with a fork. Bake them directly on the center oven rack for 60 to 70 minutes until they are tender. Let them cool for 10 minutes before serving.
  • Preheat the oven to 450°F. Halve each potato, scoop out the insides into a bowl, leaving a 1/4-inch shell. Mash the potatoes with a fork or potato masher and set aside. Brush the potato shells with melted butter, sprinkle with salt, cut them into strips, and place on a baking sheet. Bake for approximately 20 minutes until golden and crispy. Set aside.
  • In a 4-quart Dutch oven, crisp up the bacon over medium-high heat. Once it's cooked, remove it with a slotted spoon and set it aside. Lower the heat to medium, then add the onion and cook for 3 to 4 minutes until tender. Stir in 3 tablespoons of flour, thyme leaves, and pepper, and cook for 1 to 2 minutes. Whisk in the chicken broth and mashed potatoes, bring to a boil, then simmer on low for 30 minutes. Add the cream and bring it to a simmer. In a medium bowl, combine 1 1/2 cups of cheese with 1 tablespoon of flour. Gradually add the cheese mixture to the soup, 1/2 cup at a time, until the cheese is melted and the soup is smooth after each addition.
  • When ready to serve, carefully pour the flavorful soup into bowls, then top it off with the rest of the cheese, sour cream, vibrant green onions, crispy bacon, and crunchy potato skins for a delightful presentation.
