Indulgent baked potato soup with crispy bacon, green onions, sour cream, and Cheddar.
Ingredients:
  • 12 slices bacon
  • 0.66666668653488 cup butter or margarine
  • 0.66666668653488 cup all-purpose flour
  • 7 cups milk
  • 4 large baked potatoes, peeled and cubed
  • 4 green onions, chopped
  • 1.25 cups shredded Cheddar cheese
  • 1 cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Instructions:
  • Assemble all ingredients.
  • In a large skillet, crisp up the bacon over medium-high heat, flipping occasionally, until perfectly browned, approximately 8 to 10 minutes. Transfer the bacon to paper towels to drain, crumble it, and keep it aside.
  • In a stockpot or Dutch oven over medium heat, melt butter. Whisk in flour until combined, then gradually pour in milk while whisking constantly until smooth and thickened.
  • Combine the potatoes and onions in the pot and bring to a boil, stirring occasionally. Lower the heat and let it simmer for 10 minutes.
  • Mix in crispy crumbled bacon, sharp Cheddar cheese, tangy sour cream, and a pinch of salt and pepper. Keep stirring until the cheese is velvety and completely melted.
