Baked potato skins loaded with cheddar, bacon, sour cream, and green onions - perfect party appetizer.
Ingredients:
  • 6 small to medium sized russet baking potatoes (total 3 pounds)
  • Extra virgin olive oil
  • Kosher salt
  • Freshly ground pepper
  • 6 strips of bacon
  • 4 ounces grated cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, thinly sliced, including the greens of the onions
Instructions:
  • Prepare the potatoes: Scrub them clean and choose your preferred method for baking - oven or microwave. For the oven, pierce the potatoes, rub with olive oil, and bake at 400°F for approximately an hour until tender. For the microwave, pierce the potatoes, rub with olive oil, and cook on high for about 5 minutes per potato.
  • Cook the bacon strips in a frying pan over medium-low heat for 10 to 15 minutes until crispy. Drain on paper towels, cool, and then crumble.
  • Once the potatoes have cooled slightly, halve them horizontally. Gently scoop out the insides with a spoon, saving the scooped potatoes for later use, and leaving a 1/4-inch layer of potato on the skin.
  • Increase the oven temperature to 450°F. Coat the potato skins inside and out with olive oil using a brush or by rubbing. Sprinkle with salt. Put the skins on a baking rack in a roasting pan. Bake for 10 minutes, flip them over, and bake for an additional 10 minutes. Let them cool before handling.
  • Layer the cheese and bacon onto the potato skins, then bake until the cheese is bubbly. Enjoy!
