Potato skins with sweet chilli sauce

Ingredients:
  • 8 medium (about 1kg) desiree potatoes, unpeeled, quartered
  • 60ml (1/4 cup) olive oil
  • Pinch of salt
  • 125ml (1/2 cup) sweet chilli sauce
  • 125g (1/2 cup) light sour cream
  • 20.00 ml chopped fresh chives
Instructions:
  • Preheat your oven to 250°C. Line a baking tray with foil. Carefully cut the potato flesh from the skin, leaving a 1cm border. Save the potato flesh for mashed potatoes if desired.
  • Lay out the potato skins on the tray, drizzle with oil, sprinkle with salt, and bake in the preheated oven on the top shelf for 20 minutes until golden brown.
  • Arrange the sweet chili sauce and sour cream in individual ramekins for dipping.
  • Place the potato skins in a spacious bowl and generously sprinkle them with fresh chives. Enjoy alongside sweet chili sauce and creamy sour cream.
