Stuffed sweet potato skins with zesty pulled chicken - a tasty dish for all!
Ingredients:
  • 900g chicken thigh fillets
  • 255.00 gm chicken style liquid stock
  • 62.50 ml chipotle salsa
  • 1 small red onion, thinly sliced
  • 16.00 gm dark brown sugar
  • 4 x 250g sweet potatoes
  • 117.50 gm sour cream, to serve
  • 40.00 ml chopped chives
Instructions:
  • Preheat the oven to 180C (or 160C fan-forced).
  • In a large ovenproof baking dish, combine chicken, Massel Liquid Stock Chicken Style, chipotle salsa, onion, garlic, and sugar. Season well and mix until coated. Cover with foil and bake for 45 minutes. Uncover, mix again, and bake for 15 more minutes. Turn chicken and bake for an additional 15 minutes or until tender and flaky.
  • Wash the sweet potato, dry it with kitchen paper, and prick it all over with a fork. Wrap it in foil and bake alongside the chicken for 1 1/4 hours or until tender.
  • Shred the chicken using 2 forks. Unwrap the sweet potato and divide it among 4 plates. Make a lengthwise cut down the center of each sweet potato, going 3/4 of the way through. Top each sweet potato with chicken, a dollop of sour cream, and a sprinkle of chives before serving.
