Delicious sweet potato skin tacos, stuffed with seasoned ground beef and sweet potato for a satisfying and vibrant meal.
Ingredients:
  • 2 sweet potatoes, about 10 ounces each
  • 2 Tablespoons olive oil
  • 3 Tablespoon taco seasoning, divided
  • 1 pound ground beef
  • 2 Tablespoons water
Instructions:
  • Preheat the oven to 400°F (200°C) and line a sheet pan with foil for easy cleanup.
  • Cut sweet potatoes in half lengthwise, coat with olive oil, sprinkle evenly with 1 tablespoon taco seasoning, then place cut side down on the pan.
  • Roast in the preheated oven for 15 minutes, then flip and roast until the potatoes are tender when pierced with a fork, approximately 15 more minutes.
  • Heat a large skillet over medium heat. Cook ground beef until browned and crumbly, about 5 to 8 minutes, breaking up clumps with a spatula. Drain excess fat.
  • Sprinkle meat with the remaining 2 tablespoons of taco seasoning mix and mix in water. Simmer until the liquid has evaporated, approximately 5 minutes.
  • Transfer the roasted sweet potatoes to a cutting board. Gently scoop out most of the sweet potato flesh, ensuring to leave about 1/4-inch of flesh inside the skins. Proceed to cut the sweet potato flesh into bite-sized pieces and mix them in with the ground beef mixture.
  • Stuff each sweet potato shell with a flavorful mixture of beef and sweet potato, pressing gently to fill any empty spaces. Transfer the filled sweet potato skins onto a serving plate, then generously top them with your favorite taco toppings.
