Irresistible potato side dish that will please everyone!
Ingredients:
  • 1kg medium red delight potatoes, unpeeled
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Using a fork, prick the potatoes all over, then wrap each potato in foil. Bake for 40 minutes or until tender. Let cool for 10 minutes before serving.
  • Peel off foil from potatoes and cut each in half lengthwise. Scoop out flesh, leaving a 1cm border, then cut each half into quarters. Spread out on 2 large baking trays, drizzle with oil, and season generously with salt and pepper. Toss gently to coat. Bake for 20-25 minutes until golden and crispy. Serve hot.
