Grilled potato skins for a crispy and satisfying treat at home.
Ingredients:
  • 6 large russet potatoes
  • 1 tablespoon olive oil
  • salt and ground black pepper to taste
  • 1 cup chopped cooked bacon
  • 1 cup shredded provolone cheese
  • 0.25 cup chopped green onion
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C), then prick the potatoes with a fork and place them on a baking sheet.
  • Roast in the preheated oven until potatoes are tender when pierced with a fork, for about 50 minutes to 1 hour. Then, take out from the oven and allow to cool.
  • Prepare the outdoor grill by heating it to medium-high heat and coating the grate generously with oil.
  • Once the potatoes have cooled, slice them lengthwise and hollow out the flesh, leaving a 1/4-inch border of skin. Save the scooped-out flesh for later use.
  • Drizzle skin with oil, season with salt and pepper, then top with bacon, provolone cheese, and green onions.
  • Grill with the lid down until the skins are crispy and the cheese is melted, about 4 to 5 minutes.
