Party-ready potato skins for game day snacking!
Ingredients:
  • 4 large (about 1kg) sebago potatoes, scrubbed
  • Olive oil spray
  • 50g cheddar cheese
  • Mild tomato salsa, or a dip of your choice
Instructions:
  • Preheat your oven to 180°C. Bake the potatoes on the oven shelf for 1-1 1/2 hours until tender. Let them cool slightly before handling.
  • Slice the potatoes in half lengthwise, then gently scoop out the potato flesh, ensuring to leave some near the skin. Slice each piece into 2 or 3 long strips.
  • Prepare a baking tray with nonstick baking paper. Lay out the potato skins, drizzle with olive oil, and generously sprinkle with cheddar. Bake for approximately 20 minutes until skins are golden and crispy. Serve with salsa or dip on the side.
