Irresistible crispy potato skins loaded with gooey cheese, crispy bacon, fresh scallions, and creamy sour cream - a guaranteed crowd pleaser!
Ingredients:
  • 4 medium russet potatoes, scrubbed
  • 0.25 cup unsalted butter, melted
  • 1 cup shredded Colby-Monterey Jack cheese
  • 0.25 teaspoon seasoned salt
  • 0.33333334326744 cup crumbled cooked bacon
  • 0.25 cup sour cream
  • 2 stalks scallions, thinly sliced
Instructions:
  • Preheat the oven to 350°F (175°C). Poke potatoes with a fork and arrange on a baking sheet.
  • Bake the potatoes in the preheated oven until easily pierced with a fork, for 1 to 1 1/2 hours. Then switch on the broiler to the low setting.
  • Once the potatoes are cool, slice them lengthwise and carefully remove the flesh, leaving a 1/4-inch layer of skin. Save the scooped-out flesh for later.
  • Melt butter and brush the insides of the potato skins. Sprinkle 2 tablespoons of cheese into each skin, season with seasoned salt, and finish with a layer of bacon on top.
  • Place the dish back in the oven and broil for 2 to 3 minutes until the cheese is melted. Serve the dish with a dollop of sour cream and a sprinkle of scallions.
