Cheese and bacon potato skins

Gooey, cheesy crowd-pleaser perfect for sharing with friends on a platter.
Ingredients:
  • 5 large (1kg total) unwashed potatoes, scrubbed
  • 12 bacon shortcuts, chopped
  • 6 green onions, sliced
  • 40g butter, melted
  • 250.00 ml grated cheddar cheese
  • Sour cream, to serve
  • Sweet chilli sauce, to serve
Instructions:
  • Preheat the oven to 180°C. Place the potatoes on the middle shelf and bake for 45 minutes to 1 hour until tender. Let them cool before serving.
  • Preheat a non-stick pan over medium heat. Cook bacon for 5 minutes, then stir in half of the onions once done.
  • 1. Preheat the grill to medium-high. 2. Quarter the potatoes, keeping the skin intact. 3. Hollow out the potatoes, leaving a thin 5mm layer. 4. Place the potato skins flesh-side down on a baking tray. 5. Brush the skins with half of the butter and grill for 3 minutes until golden. 6. Flip the skins, brush with the remaining butter, and grill for another 3 minutes until golden.
  • Fill potato skins generously with savory bacon mixture, then sprinkle with a layer of cheese. Grill to perfection for 5 minutes, melting the cheese to gooey deliciousness.
  • Garnish with the remaining onions and enjoy with a dollop of sour cream and a drizzle of sweet chili sauce.
