Indulgent twist on stuffed peppers: Roasted poblano peppers filled with bacon mashed potatoes and Cheddar cheese.
Ingredients:
  • 0.5 cup sour cream
  • 0.25 cup salsa verde
  • 1 tablespoon chopped fresh cilantro
  • 4 russet potatoes, peeled and chopped
  • 8 poblano peppers
  • 8 slices bacon
  • 0.5 red bell pepper, diced
  • 0.5 onion, diced
  • 2 cloves garlic, minced
  • 0.5 cup shredded Cheddar cheese
  • 0.5 cup milk
  • 3 tablespoons butter
Instructions:
  • Combine sour cream, zesty salsa verde, and fresh cilantro in a bowl, ensuring a uniform sauce consistency; chill in the refrigerator.
  • In a large pot, cover potatoes with salted water and bring to a boil. Simmer on medium-low heat until tender, around 10 minutes. Drain and cool in a large bowl.
  • Preheat broiler with oven rack positioned 6 inches from heat source. Line a baking sheet with aluminum foil and arrange peppers on top.
  • 1. Place the peppers under the preheated broiler until the skins are blackened and blistered, which takes about 3 to 4 minutes. 2. Transfer the blackened peppers to a bowl and tightly seal with plastic wrap, letting them steam as they cool for approximately 20 minutes.
  • In a large skillet, sizzle bacon until crispy and golden-brown, around 10 minutes, turning occasionally. Save 1 tablespoon of the delicious bacon grease in the skillet. Let the bacon pieces rest on paper towels and give them a good chop.
  • Sauté red bell pepper, onion, and garlic in the skillet with the bacon grease until vegetables soften, about 4 to 6 minutes.
  • Incorporate half of the bacon, red bell pepper mixture, Cheddar cheese, milk, and butter into the potatoes, then mash until thoroughly combined.
  • Peel the skins off the roasted poblano peppers, then carefully slice each pepper to remove the seeds. Fill the peppers with the potato mixture and finish by topping them with the remaining bacon and sauce.
