Irresistible Irish baked potato stuffed with bacon, cabbage, potatoes, and gooey Cheddar cheese.
Ingredients:
  • 2 large baking potatoes
  • 1.5 cups finely chopped cabbage
  • 0.5 cup finely chopped onion
  • 4 slices bacon, chopped
  • 0.5 cup milk
  • 0.25 cup butter
  • 0.25 teaspoon ground black pepper
  • salt to taste
  • 0.75 cup shredded Cheddar cheese, divided
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Prepare the potatoes by scrubbing them clean and poking them with a fork. Place them on a microwave-safe plate and cook on high for 5 minutes. Then, flip the potatoes over and continue microwaving until they are soft, for about another 5 minutes. Scoop out the potato flesh into a medium bowl, and set aside the potato skins.
  • In a large skillet over medium heat, sauté cabbage, onion, and bacon until vegetables are tender, approximately 10 minutes. Mix in milk, butter, pepper, and salt until combined. Stir in potato flesh and 1/2 cup Cheddar cheese, cooking and stirring until potato is broken up and lightly mashed and milk is absorbed, for about 5 minutes.
  • Take the skillet off the heat. Stuff potato skins with potato mixture and place them in a baking dish. Sprinkle with the remaining 1/4 cup of Cheddar cheese.
  • Cook until the cheese is bubbly and the potatoes are heated through, approximately 25 minutes in the preheated oven.
