Irish-inspired creamy potato, carrot, and leek soup - kid-approved deliciousness.
Ingredients:
  • 2 tablespoons butter
  • 4 leeks, chopped
  • 4 celery stalks, chopped
  • 4 cups chicken broth
  • 4 cups vegetable broth
  • 6 large potatoes, diced
  • 5 carrots, chopped
  • 2 teaspoons salt
  • 1 bay leaf
  • 1 cup heavy whipping cream
Instructions:
  • In a stockpot over medium-high heat, melt butter until it sizzles. Add leeks and celery, sautéing until soft, about 3 to 5 minutes.
  • Combine flavorful broth, hearty potatoes, vibrant carrots, a hint of salt, and a fragrant bay leaf in a pot, and bring to a lively boil. Simmer until the potatoes and carrots are tender, approximately 20 minutes. Remove and discard the bay leaf before serving.
  • Using an immersion blender, smoothly blend the soup. Incorporate the cream into the mixture. Lower the heat to medium-low and simmer until the soup thickens, around 20 minutes.
