Ingredients:
  • 36.40 gm olive oil
  • 1.5kg Beef Chuck Casserole Steak, diced
  • 2 large onions, cut into thin wedges
  • 2 leeks, white part only, sliced
  • 2 garlic cloves, crushed
  • 4 sticks celery, trimmed, sliced
  • 2 large carrots, peeled, cut into 3cm pieces
  • 2 x 425g cans crushed tomatoes
  • 61.88 gm red wine
  • 255.00 gm beef stock
  • Mashed potato, to serve
  • Fresh parsley leaves, to serve
Instructions:
  • In a large saucepan, heat 1 tablespoon of oil over high heat. Brown the beef in 4 batches, stirring constantly. Transfer to a plate.
  • Lower the heat to medium and introduce the rest of the oil, onions, leeks, garlic, celery, and carrots into the pan. Sauté, stirring frequently, for 5 minutes.
  • Add the beef back to the pan along with the tomatoes, wine, and stock. Allow the mixture to come to a boil. Lower the heat and cover the pan, letting it simmer for 1 hour. Then, uncover and continue simmering gently, stirring occasionally, for another 30 minutes until the beef is tender.
  • Spread half of the casserole onto 4 plates. Accompany with mashed potatoes or bread, garnished with fresh parsley. Save the rest of the casserole for High Pie.
