Winter comfort: Lasagne revamped with a deliciously soupy twist, sure to warm your soul.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 400g beef mince
  • 40.00 ml plain flour
  • 44.40 gm tomato paste
  • 500g jar tomato pasta sauce
  • 1L (4 cups) salt reduced chicken style liquid stock
  • 5 dried lasagne sheets
  • 41.20 gm milk
  • 40.00 ml chopped fresh continental parsley, plus whole leaves, extra, to serve
  • 40.00 ml chopped fresh basil leaves, plus whole leaves, extra, to serve
  • 55g (1/2 cup) grated mozzarella
  • 20g (1/4 cup) finely grated parmesan
Instructions:
  • In a large, heavy-based saucepan, heat oil over medium-high heat. Cook onion until softened, about 5 minutes. Add mince, breaking up lumps, and brown for 6-8 minutes. Stir in garlic for 1 minute. Add flour and tomato paste, mix well. Pour in pasta sauce and stock, bring to a boil. Reduce heat and simmer for 15 minutes until slightly thickened, stirring occasionally.
  • Roughly break up lasagne sheets into 6cm pieces and add to the soup. Simmer and stir occasionally for 10 minutes until pasta is tender. Stir in milk, parsley, and basil, then season to taste.
  • Ladle the soup into individual bowls and garnish with mozzarella, parmesan, and an extra sprinkle of parsley and basil.
