One-pot lasagne soup

Transformed lasagne flavors into an easy one-pot soup.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 400g beef mince
  • 40.00 ml plain flour
  • 44.40 gm tomato paste
  • 500g jar tomato pasta sauce
  • 1 litre salt reduced chicken style liquid stock
  • 5 dried lasagne sheets
  • 41.20 gm milk
  • 40.00 ml chopped fresh flat-leaf parsley leaves, plus extra to serve
  • 40.00 ml chopped fresh basil leaves, plus extra to serve
  • 125.00 ml grated mozzarella
  • 62.50 ml finely grated parmesan
Instructions:
  • In a large, heavy-based saucepan over medium-high heat, heat oil. Add onion and cook until softened, about 5 minutes. Add mince and brown for 6 to 8 minutes, breaking up lumps with a wooden spoon. Stir in garlic and cook until fragrant, about 1 minute. Add flour and tomato paste; stir to combine. Pour in pasta sauce and stock, bring to a boil, then reduce heat to low. Simmer, stirring occasionally, for about 15 minutes until slightly thickened.
  • Break lasagne sheets into 6cm pieces and add to soup. Simmer for 10 minutes until pasta is tender, stirring occasionally. Add milk, parsley, and basil. Stir well and season with salt and pepper.
  • Divide the soup into serving bowls and garnish with mozzarella, parmesan, extra parsley, and basil before serving. Enjoy!
