Easy one-pot lasagna skillet with ground beef, pasta, and cheesy layers for a quick and delicious dinner.
Ingredients:
  • 1/2 lb ground beef round
  • 1/4 cup chopped onion
  • 1/2 teaspoon finely chopped garlic
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons Italian seasoning
  • 1 cup part-skim ricotta cheese
  • 4 precooked lasagna noodles, broken into large pieces
  • 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
  • 1 cup roasted red bell peppers (from a jar), chopped
  • 5 teaspoons refrigerated basil pesto (from 7-oz container)
  • 1/2 cup shredded mozzarella-Parmesan cheese blend (2 oz)
Instructions:
  • In a large nonstick skillet, sauté beef, onion, and garlic over medium-high heat for 5 to 7 minutes until beef is fully cooked; remember to stir occasionally. Drain any excess fat. Stir in vinegar and 1 teaspoon of Italian seasoning. Spread ricotta cheese evenly over the beef. Layer the noodles on top, ensuring they overlap to form a flat surface.
  • Combine tomatoes and roasted peppers in a small bowl, ensuring noodles are fully coated. Sprinkle 1 teaspoon Italian seasoning on top. Evenly dollop pesto over the mixture. Bring to a boil, then lower the heat and simmer covered for 30 minutes until noodles are tender. Uncover, top with cheese blend, and let rest for 5 minutes before slicing into wedges. Serve directly from the skillet using a slotted spatula.
