Whip up a delicious lasagna in just an hour using pantry staples like pasta and canned tomatoes, along with frozen spinach and cheese.
Ingredients:
  • 2 cups whole milk or part-skim ricotta
  • 1/3 cup grated pecorino Romano cheese
  • 2 tablespoons olive oil
  • 3 medium onions, chopped (about 3 cups)
  • 4 garlic cloves, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (28-ounce) can crushed tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 8 ounces lasagna noodles, broken in half (across)
  • 6 ounces whole milk or part-skim mozzarella cheese, shredded
Instructions:
  • Mix together the mozzarella and Romano cheeses.
  • Prepare the sauce: Heat oil in a large skillet over medium heat. Sauté onions until lightly golden, about 11 to 12 minutes. Add garlic, basil, and oregano, cook for 1 minute. Mix in spinach, cook for another minute. Stir in tomatoes, salt, pepper, and 3 cups of water. Simmer until ready.
  • Simmer the lasagna noodles in the sauce, stirring occasionally until al dente and the sauce thickens, about 12-14 minutes.
  • Preheat the broiler by positioning an oven rack 4 to 5 inches below the heat source.
  • Melt the mozzarella: After cooling the lasagna for 3 minutes, spread the ricotta mixture evenly on top. Add mozzarella and broil until melted and lightly browned, for 1 to 2 minutes. Allow the lasagna to rest for 10 minutes before serving.
