Hearty one-pot stew with vegetables, bacon, and sausage. Perfect with crusty buttered bread.
Ingredients:
  • 8 thin beef sausages
  • 1 brown onion, chopped
  • 1 garlic clove, crushed
  • 3 rashers bacon, trimmed, finely chopped
  • 2 Sebago potatoes, peeled, cut into 1cm cubes
  • 2 sticks celery, trimmed, chopped
  • 400g can chopped tomatoes
  • 255.00 gm beef stock
  • 5.20 gm Tabasco sauce
  • 1 lemon, juiced
  • 40.00 ml flat-leaf parsley leaves, roughly chopped
  • 1/4 tsp dried mixed herbs
  • 420g can four-bean mix, drained, rinsed crusty bread rolls, to serve
Instructions:
  • In a large saucepan over medium heat, sizzle sausages in oil until beautifully browned, about 8 to 10 minutes. Set aside once done.
  • In a saucepan, sizzle onions, garlic, and bacon for 2 minutes. Toss in potatoes and celery, cook for 3 minutes. Mix in tomatoes, stock, Tabasco, 2 tablespoons lemon juice, parsley, and herbs.
  • Cut each sausage into 5 slices and add them to a saucepan. Cover and cook for 15 minutes, stirring occasionally.
  • Add beans to the casserole and simmer uncovered for 5 to 7 minutes until the beans are heated through. Serve the flavorful casserole heaped onto plates and enjoy with a side of crusty bread.
