Ingredients:
  • 18.20 gm olive oil
  • 500g lean beef chipolata sausages
  • 200g bacon, diced
  • 1 large red onion, chopped
  • 2 garlic cloves, crushed
  • 1 small red chilli, deseeded, finely chopped
  • 5.00 gm sweet paprika (see note)
  • 400g can whole tomatoes, chopped
  • 400g can cannellini beans, rinsed, drained
  • 255.00 gm beef stock
  • 22.20 gm tomato paste
  • 150.00 gm instant polenta
  • flat-leaf parsley leaves, chopped, to serve
Instructions:
  • In a heavy-based saucepan over medium heat, heat oil, then brown sausages by turning frequently for 4 minutes. Transfer sausages to a plate and cover to keep warm. To the same pan, add bacon and cook for 2 minutes. Add onion, garlic, chilli, and sweet paprika, and cook for an additional 4 minutes until tender.
  • Combine tomatoes with their juice, beans, stock, and tomato paste in the pot. Stir everything together until well mixed. Bring the mixture to a boil, then gently add the sausages. Lower the heat to medium-low and let it simmer without a lid, stirring occasionally, for 30 minutes or until the sausages are fully cooked.
  • Cook the polenta according to the instructions on the packaging.
  • Spoon polenta into bowls, top with stew, sprinkle with parsley, and serve.
