Fiber-rich sausage and bean stew ready in under 45 minutes for a quick and healthy weeknight meal.
Ingredients:
  • 1.1kg brushed potatoes, peeled, roughly chopped
  • 169.95 gm milk
  • 23.40 gm wholegrain mustard
  • 16 (about 560g) beef chipolata sausages
  • 1 large red onion, cut into thin wedges
  • pinch dried chilli flakes
  • 1 tsp fennel seeds, crushed (optional)
  • 400g can cherry tomatoes in tomato juice
  • 20.00 ml chopped fresh thyme leaves
  • 400g can borlotti beans, drained, rinsed
  • 165.00 ml coarsely chopped fresh flat-leaf parsley leaves
Instructions:
  • In a large saucepan, boil the potato in cold water until tender. Drain and transfer to a large heatproof bowl. Mash the potato and mix in milk and mustard until creamy. Season with salt and pepper. Cover to keep warm.
  • Heat half of the oil in a large saucepan over medium-high heat until sizzling. Add the sausages and cook for 5 minutes, turning occasionally until nicely browned. Transfer the sausages to a plate. Then, add the remaining oil to the pan and cook the onion, chili, garlic, and fennel if using, stirring occasionally for about 5 minutes until the onion has softened.
  • Combine tomato, thyme, and 1 cup cold water in a pot and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally. Add sausages and beans and simmer for an additional 5 minutes until sausages are fully cooked. Stir in half of the parsley. Serve over mash and garnish with the remaining parsley.
