Chorizo and bean casserole

Spicy sausage casserole packed with flavorful veggies for a satisfying meal.
Ingredients:
  • 18.40 gm vegetable oil
  • 3 (about 350g) chorizo sausages, sliced
  • 1 large brown onion, chopped
  • 2 garlic cloves, crushed
  • 1 1/2 tsp Mexican chilli powder
  • 1 800g can diced tomatoes
  • 2 400g cans red kidney beans, rinsed, drained
  • 700g orange sweet potato (kumara), peeled, cut into 1.5cm pieces
  • 1 large (about 500g) eggplant, cut into 1.5cm pieces
  • Crusty bread rolls, to serve
Instructions:
  • In a large saucepan over medium-high heat, heat oil until shimmering. Add sausages and onion, cooking and stirring frequently for 3 minutes until onion is light golden and sausages brown slightly.
  • Sauté the garlic and chili powder for 30 seconds until fragrant. Add in the tomatoes, kidney beans, sweet potato, and eggplant. Increase heat, and bring to a boil.
  • Lower the heat, cover, and gently simmer the mixture for 20 minutes, stirring occasionally, until the vegetables are soft. Enjoy with some delicious crusty bread rolls on the side.
