Basic beef casserole

Cozy up with a hearty beef casserole perfect for colder days.
Ingredients:
  • 18.20 gm olive oil
  • 1kg beef chuck steak, cut into 3cm pieces
  • 2 brown onions, coarsely chopped
  • 2 celery sticks, coarsely chopped
  • 1 carrot, peeled, coarsely chopped
  • 2 garlic cloves, crushed
  • 40.00 ml plain flour
  • 250ml red wine
  • 500ml beef stock
  • 1 x 400g can chopped tomatoes
  • 1 bouquet garni (see note)
Instructions:
  • Preheat the oven to 150°C. In a large flameproof casserole pan over medium-high heat, warm half of the oil. Brown one-quarter of the beef by cooking and turning occasionally for 5 minutes. Transfer to a bowl and repeat with the remaining beef in 3 more batches, adding oil as needed.
  • In the same pan, heat the remaining oil. Sauté onion, celery, carrot, and garlic for 5 minutes until the onion softens. Sprinkle flour over the veggies, stirring well for 2 minutes until fully combined. Pour in the beef and red wine, bring to a boil, and cook for 2 minutes until the wine reduces by half. Stir in the beef stock, tomatoes, and bouquet garni, bring to a simmer, then remove from heat.
  • Roast in a preheated oven with a loose cover, stirring occasionally, for 1 1/2-2 hours until the beef is tender and the sauce slightly thickens. Season with salt and pepper to taste. Enjoy with mashed potatoes, if desired.
