Juicy Irish sirloin steaks with whiskey pan sauce, flambeed tableside for a spectacular presentation.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 4 (4 ounce) beef top sirloin steaks
  • 1 clove garlic, cut in half lengthwise
  • 0.25 cup Irish whiskey (such as Jameson®)
  • salt and ground black pepper to taste
  • 2 tablespoons chopped fresh flat-leaf parsley
Instructions:
  • In a heavy skillet over medium heat, melt butter and oil until sizzling. Cook onion until they turn a lovely golden brown, approximately 10 minutes, then move them to the sides of the pan.
  • Massage steaks with garlic, then sear in skillet over medium-high heat until browned outside but pink inside, 2 to 4 minutes per side. Use instant-read thermometer to ensure medium doneness at 140°F (60°C).
  • Take the skillet off the heat, then carefully pour Irish whiskey into it. Remember, whiskey fumes can ignite. Stir in the browned onions and let it simmer over medium-low heat.
  • Season the steaks generously with salt and pepper, then top with fresh parsley for a burst of flavor. Flip the steaks to ensure they are fully coated in the delicious pan sauce.
  • Serve the steaks and generously drizzle the pan sauce over them.
