Mashed Potato Stuffed Meatloaf

Cheesy mashed potato-stuffed meatloaf for ultimate comfort-food bliss!
Ingredients:
  • 1 box (4.9 oz) Betty Crocker™ Ultimate Cheddar mashed potatoes
  • 1 cup water
  • 1/2 cup milk
  • 1 1/2 lb lean (at least 80%) ground beef
  • 3/4 cup Progresso™ Italian style bread crumbs
  • 1/2 cup ketchup
  • 1/4 cup chopped green onions (4 medium)
  • 2 eggs
Instructions:
  • Preheat oven to 350°F. Grease a 9x5-inch loaf pan with shortening. Prepare potatoes according to box instructions, using 1 cup of water, 1/2 cup of milk, and the Cheese Sauce pouch. Set aside.
  • Combine all Meatloaf ingredients in a large bowl until thoroughly mixed. Press half of the beef mixture firmly into the pan. Spoon the potatoes over the beef mixture, leaving a 1/4-inch border around the edges. Top with the remaining beef mixture, pressing gently.
  • Bake for 60-65 minutes until a meat thermometer inserted into the center reads 160°F. Allow the loaf to rest for 10 minutes before removing it from the pan.
