Try this easy and delicious recipe combining mashed potatoes and biscuits using Bisquick and instant mashed potato mix.
Ingredients:
  • 4 1/2 cups Original Bisquick™ mix
  • 1 1/3 cups milk
  • 10 slices (12 oz) cooked and crumbled bacon
  • 1/2 cup chopped green onions (8 medium)
  • 1/4 teaspoon garlic powder
  • 1 pouch Betty Crocker™ homestyle creamy butter mashed potatoes, prepared as directed on pouch
  • 1 cup shredded sharp Cheddar or Monterey Jack cheese (4 oz)
  • 3/4 cup shredded mozzarella cheese (3 oz)
Instructions:
  • Preheat oven to 375°F and lightly grease a 9-inch round cake pan.
  • Combine Original Bisquick® mix, milk, 1/2 cup crumbled bacon, 1/4 cup green onions, and garlic powder in a large bowl until a smooth, soft dough forms.
  • Gently pat the dough to 1/2 inch thickness on a surface dusted with Bisquick mix. Cut the dough into 16 (3-inch) biscuits using a round biscuit cutter.
  • Take 8 biscuits and generously top each with mashed potatoes and crumbled bacon. Cover with another biscuit, sealing the edges. Place them in a cake pan with one biscuit in the center and 7 around it. Sprinkle 3/4 cup of shredded Cheddar cheese over the tops and sides of the biscuits.
  • Bake the biscuits for around 20 minutes or until they turn a beautiful golden brown on top and a toothpick inserted in the center comes out clean. Sprinkle the remaining 1/4 cup of cheddar cheese and mozzarella cheese on top of the biscuits. Bake for an additional 5 minutes or until the cheese is perfectly melted. Finish by topping the biscuits with the rest of the green onions and crumbled bacon. Enjoy!
