Delicious make-ahead loaded mashed potato casserole with peppers, onions, bacon, and Cheddar cheese.
Ingredients:
  • 5 pounds potatoes, peeled and cubed
  • 8 strips bacon
  • 0.66666668653488 cup chopped green or red bell pepper
  • 0.5 cup chopped onion, or more to taste
  • 0.75 cup hot milk
  • 6 tablespoons butter, plus more for greasing
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper, or to taste
  • 1 (10 ounce) package sharp Cheddar cheese, cut into chunks
  • 3 large eggs
Instructions:
  • Preheat the oven to 350°F (175°C) and generously butter 2 large casserole dishes.
  • In a large pot, simmer potatoes in salted water until tender, about 10-15 minutes. Drain and transfer to a large bowl.
  • As the potatoes cook, crisp up the bacon in a large skillet over medium-high heat. Make sure to flip it occasionally until it's golden brown and crispy, which should take about 10 to 12 minutes. Once it's done, pat the bacon dry with paper towels, crumble it, and keep 2 tablespoons of the bacon drippings in the skillet, discarding the excess.
  • Saute bell pepper and onion in the flavorful drippings until tender, around 5 minutes. Take off the heat.
  • In the bowl of a stand mixer with the paddle attachment, mix together potatoes, hot milk, butter, salt, and pepper on low speed, then increase to medium speed until fluffy, about 2 to 3 minutes. Next, add Cheddar cheese, eggs, bell pepper-onion mixture, and bacon, and beat on medium speed until cheese is in smaller pieces, approximately 3 minutes. Finally, fill each casserole dish 2/3 full with the potato mixture.
  • Bake in the oven until potatoes are puffed up and heated through, for 30-35 minutes.
