Indulge in a flavorful Italian-style mashed potato casserole bursting with Parmesan, garlic, and rosemary. Topped with buttery bread crumbs, tomatoes, and basil for a festive touch. Perfect for parties and holidays, it stays warm and bubbly for hours.
Ingredients:
  • 2 pouches (4.7 oz each) Betty Crocker™ roasted garlic mashed potatoes
  • Water, milk and butter called for on potatoes pouches
  • 1 package (8 oz) cream cheese, softened
  • 1 cup shredded Parmesan cheese (4 oz)
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon dried rosemary leaves
  • 1 tablespoon butter
  • 1 cup Progresso™ Panko Italian style crispy bread crumbs
  • 1/2 cup diced fresh tomatoes
  • 1/4 cup chopped fresh basil leaves
Instructions:
  • Preheat the oven to 400°F. Grease a 13x9-inch (3-quart) glass baking dish with cooking spray. Prepare the potato pouches according to the instructions.
  • Blend cream cheese, 1/2 cup Parmesan cheese, Italian seasoning, and rosemary into the potatoes. Transfer the mixture to a baking dish and sprinkle the remaining 1/2 cup Parmesan cheese on top. Bake for 18 to 22 minutes until hot throughout (reaching at least 165°F in the middle of the casserole).
  • In an 8-inch skillet over medium heat, melt butter and cook bread crumbs for 2 to 3 minutes until toasted. Remove from heat and sprinkle the casserole with tomatoes, toasted bread crumbs, and basil.
