Loaded Italian sausage focaccia

Quick and flavorful focaccia, a family favorite ready in minutes.
Ingredients:
  • 400g Italian sausages, coarsely chopped
  • 2 shortcut bacon rashers, chopped
  • 1 red onion, cut into thin wedges
  • 1 red capsicum, deseeded, thinly sliced
  • 450g focaccia
  • 1 tsp dried oregano leaves
  • 70g (1/4 cup) tomato paste
  • 50g baby spinach
  • 75g drained semi-dried tomatoes
  • 100g (1 cup) coarsely grated mozzarella
  • Fresh oregano leaves, to serve (optional)
Instructions:
  • 1. Preheat a large frying pan over medium-high heat. Add sausage and bacon. Cook for 5-10 minutes until golden, then add onion and capsicum. Stir and cook for an additional 2-3 minutes until just softened. Remove from heat and season to taste.
  • Preheat the oven grill on high. Cut the top off the focaccia with a large serrated knife and hollow out the center slightly. Grill the focaccia, turning occasionally, for 2 minutes until lightly toasted.
  • 1. Place the focaccia on a baking tray. 2. Mix garlic, oregano, and tomato paste in a bowl. 3. Spread the tomato mixture over the focaccia. 4. Add spinach, sausage, and semi-dried tomatoes on top. 5. Sprinkle with mozzarella. 6. Grill for 3-5 minutes until golden and melted. 7. Garnish with fresh oregano, if desired.
