Create a decadent Chicago-style deep dish pizza with a thick, buttery crust loaded with layers of gooey cheese, sausage, and sweet & spicy red sauce that will leave you craving more.
Ingredients:
  • For the dough
  • 2 tablespoons yellow cornmeal
  • 3/4 teaspoon salt
  • 1 1/4 teaspoons instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon olive oil
  • Flour (for rolling the dough)
  • 2 tablespoons unsalted butter, softened at room temperature
  • Vegetable oil spray (for the cake pan)
  • For the filling
  • 1 pound sweet or hot Italian sausage, casings removed, or bulk Italian sausage
  • 8 ounces sliced mozzarella cheese
  • 1/4 cup grated Parmesan (for the top of the pie)
  • For the sauce
  • 1 tablespoon unsalted butter
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon dried rosemary
  • Pinch or two red pepper flakes
  • 1 can (28 ounces) crushed tomatoes, or whole tomatoes crushed in a bowl
  • 1/4 teaspoon salt
Instructions:
  • Combine the flour, corn meal, salt, yeast, and sugar in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed until blended. Pour in 1/2 cup plus 2 tablespoons of room temperature water and mix until well combined. If needed, add 1 or 2 more tablespoons of water until the dough feels soft and slightly sticky.
  • Use the dough hook to knead the dough on low speed for 5 to 7 minutes until smooth and elastic. Drizzle 1 teaspoon of olive oil into a clean bowl, shape the dough into a ball, coat it with oil, cover with plastic wrap, and let rise for 1 hour until puffy.
  • Create a buttery dough bundle: Roll out dough into a 9x12-inch rectangle on a floured surface. Spread 2 tablespoons of butter on top. Roll the dough into a cylinder, then press flat with seam up. Fold like a business letter, shape into a ball, cover, and chill for 45 minutes.
  • Cook the sausage in a large skillet over medium heat until fully browned, breaking it up into crumbles with a fork or spatula. Then, transfer to a plate lined with paper towels.
  • For the sauce, melt the butter in the skillet used for cooking the sausage over medium heat. Add onions, garlic, oregano, rosemary, and red pepper flakes. Stir and cook for 4 to 5 minutes until onions are soft. Add tomatoes, salt, and sugar. Stir and cook for 3 to 4 minutes until the sauce thickens and flavors meld. Let it cool.
  • Preheat your oven to 425°F and generously spray a 9x2-inch cake pan with vegetable oil.
  • Prepare the pizza: Roll out the dough into a 12-inch circle on a lightly floured surface. Place it in the cake pan, pressing into the corners and up the sides. Allow it to rest for 10 minutes. Press the dough again against the sides of the pan to prevent shrinking during baking. Layer cheese slices, cooked crumbled sausage, sauce, and sprinkle with Parmesan cheese.   • Bake the pizza until the crust browns and the filling is bubbly, approximately 25 minutes. Let it rest for 10 minutes before removing it from the pan in one piece or slicing and serving it directly from the pan. To remove in one piece, gently slide a knife around the pan's edge, then carefully lift it out using a wide spatula onto a large plate.
