Impress guests with a delicious Italian pasta salad loaded with veggies, pepperoni, and black olives.
Ingredients:
  • 1 (16 ounce) package rotelle pasta
  • 1 cup broccoli florets
  • 1 cup chopped carrots
  • 1 cup chopped tomatoes
  • 0.75 cup grated Parmesan cheese
  • 1 (6 ounce) can black olives, drained
  • 1 (6 ounce) package pepperoni
  • 1 cup Italian-style salad dressing (such as Olive Garden®), divided
Instructions:
  • Bring a large pot of salted water to a boil. Cook rotelle for about 12 minutes until al dente, then drain.
  • Combine rotelle, broccoli, carrots, tomatoes, Parmesan cheese, olives, and pepperoni in a large bowl. Drizzle half of the dressing over the salad and mix well. Cover the bowl with plastic wrap and chill in the refrigerator for 8 hours or overnight. Just before serving, pour the rest of the dressing over the salad and gently toss to combine.
