Loaded baked potato casserole with creamy mashed potatoes, Cheddar cheese, crispy bacon, sour cream, and green onions for the ultimate comfort food side dish.
Ingredients:
  • 10 Yukon Gold potatoes, peeled and halved
  • 6 slices bacon
  • 2 cups shredded Cheddar cheese, divided
  • 1 cup evaporated milk
  • 1 cup sliced green onions, divided
  • 0.5 cup sour cream
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • In a large pot, submerge the potatoes in salted water and bring to a boil. Reduce heat to medium-low and simmer for about 20 minutes until tender. Drain the potatoes and return them to the pot to dry.
  • Cook the bacon in a large skillet over medium-high heat until crispy and evenly browned, about 10 minutes. Transfer the bacon to a paper towel-lined plate to drain; then crumble and set aside.
  • Mix together 1 1/2 cups Cheddar cheese, evaporated milk, 1/2 cup green onions, sour cream, half of the crumbled bacon, salt, and black pepper with the potatoes in a pot. Use a potato masher to make it creamy, then spread the mixture into the baking dish.
  • After baking for 25 minutes in the preheated oven, sprinkle with the remaining Cheddar cheese, green onions, and bacon. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted.
